Zucchini Pie

5 cups of zucchini

1/2 cup of water

1 cup of sugar

1 tsp. of cinnamon

1/4 cup of lemon juice

*Take a large zucchini and peel out the seed. Cut into thin slices as you would an apple.

Cook the above mixture until the zucchini is done. Make a thickening of corn, starch and water. Stir in the above mixture. Bake in a regular double crust pie until top crust is done. Bake at 350 degrees for about 45 minutes or about the same time it takes to bake an apple pie.
