Ingredients
1 pkg. of white or yellow cake mix
(1) 3 oz. pistachio instant pudding
3 eggs
3/4 cup of oil
1 cup of 7-up, ginger ale, club soda or water
1/2 cup of walnuts
1/2 cup of coconut
1 tsp. of vanilla
Frosting
1 pkg. of pistachio instant pudding
2 envelopes dry whipping cream (may use 8 oz. carton of cool whip instead of dry whipping cream & milk)
1 1/2 cups of milk

Beat all cake ingredients except the pop. Add pop slowly and mix. Pour into greased & floured 9×13 pan. Bake at 350 degrees for 30-35 minutes. For the frosting, beat all the ingredients until thick. Frost cooled cake. Top with 1/2 cup of coconut and 1/2 cup of nuts (if desired)
