Summery Hawaiian Coffee Cake

Ingredients

1 1/2 cups of flour

1/2 cup of sugar

1 egg – beaten

1/2 cup of melted butter

2 1/2 tsp. of baking powder

1 cup of crushed pineapple

Topping

1 cup of coconut

2 tbls. of flour

1/2 cup of brown sugar

2 tbls. of butter

*Sift flour & sugar together. Set aside. Combine egg, butter, baking powder and pineapple. Add flour mixture. Spread in greased 9×9 pan. Combine topping ingredients and sprinkle over the top. Bake at 350 degrees for 25-30 minutes.
