Squash Soup

3 tbsp. of butter

2 cups of cut-up onion

*Melt butter in large pot, add onion and cook 5 minutes. Now add:

  • 1 peeled, cubed butternut squash
  • 2 peeled, cubed sweet potatoes
  • 8 cups of chicken stock
  • 1/2 tsp. of salt
  • 1/2 tsp. of pepper

*Bring to boil. Then, turn heat down and simmer for 15 minutes.

Turn heat off and cool a bit. Then, add:

  • 1 apple cut-up and peeled
  • 3 tbsp. of honey

Puree in blender. Return to clean pot. Add:

  • 1/2 tsp. cinnamon
  • 1/4 tsp. mace
  • 1/8 tsp. nutmeg
  • 1 cup of heavy cream

Simmer and serve hot.

*If not serving right away, add cream just before serving. Don’t add cream to soup if its boiling.
