Seafood Rice Salad

Ingredients

(1) 8-oz. pkg. of frozen, cooked shrimp

(1) 6 1/2 to 7-oz. can of tuna, drained

3 cups of cooked, cooled rice

1/2 cup of finely chopped onion

1/2 cup of finely chopped sweet pickle (some use pickle relish)

1 1/2 cup of thinly sliced celery

1/4 cup of diced pimentos

3 hard cooked eggs, chopped

1 tbsp. of lemon juice

1 cup of mayo

*Combine all ingredients. Toss lightly. Season to taste. Chill.
