Crust:
- 2 cups of flour
- 3/4 cup of powder sugar
- 1 cup of butter
*Combine flour and sugar. Cut in butter until crumbs form. Press into a 15×10 jelly roll pan. Bake at 350 for 15 minutes. While crust is baking – prepare the filling:
- 4 eggs
- 2 cups of sugar
- 1/2 tsp. of salt
- 4 cups of rhubarb (chopped)
- 1/2 cup of flour
*Blend eggs, sugar and salt until smooth. Fold in rhubarb. Spread over baked crust. Bake 40-50 minutes at 350 degrees until light brown.
