Rhubarb Custard Bars

Ingredients

Crust:

  • 2 cups of flour
  • 1 cup of butter – cold and cut into pieces
  • 1/4 cup of sugar

Mix flour and sugar. Cut in butter until resembles course crumbs. Press into 9×13 pan. Bake at 350 degrees for 10 minutes.

Filling:

  • 2 cups of sugar
  • 1 cup of whipping cream
  • 5 cups of diced rhubarb
  • 7 tbsp. of flour
  • 3 eggs, beaten

Combine sugar and flour. Add cream and eggs. Then, add the rhubarb.

Pour over the hot crust. Bake at 350 degrees for 45 minutes.
