Ingredients:
1 cup of shortening (can use butter)
1 1/2 cups of brown sugar
2 eggs
1 tsp. of vanilla
3 cups of flour
1 tsp. of baking soda
1/2 tsp. of salt
1 tsp. of cinnamon
1/2 cup of coconut
1 1/2 cups of rhubarb, diced
Directions:
Sift dry ingredients together and set aside. Mix shortening, brown sugar, eggs and vanilla in a large mixing bowl. Then, add dry ingredients, 1 cup at a time. Stir in coconut and rhubarb with a spatula. Bake at 350 degrees for 12 minutes. Makes 3 dozen cookies.
Frost with a cream cheese frosting – here’s the recipe:
- 3 oz. of cream cheese (room temp)
- 1/4 cup of butter (room temp)
- 1 cup of powdered sugar
- 1 tsp. of vanilla
Beat until smooth.
Note: Put the frosting on the cookies while they are still warm – ENJOY!
