Rhubarb Cake Dessert

Ingredients

Mix the pie crust:

  • 1 cup of butter
  • 2 cups of flour
  • 2 tbsp. of sugar

Put into a 9×13 pan and bake for 10 minutes at 350 degrees.

Mix together:

  • 1 cup of cream
  • 2 cups of sugar
  • 6 egg yolks
  • 1/4 tsp. of salt
  • 5 cups of rhubarb – cut fine
  • 4 tbsp. of flour

Pour on top of baked crust. Bake 40-45 minutes at 350 degrees.

Topping:

  • Beat 6 egg whites ’til firm. Add 12 tbsp. of sugar (2 at a time) and 1 tsp. of vanilla. Put on top and bake at 350 degrees ’til brown.
