Ingredients
Mix the pie crust:
- 1 cup of butter
- 2 cups of flour
- 2 tbsp. of sugar
Put into a 9×13 pan and bake for 10 minutes at 350 degrees.
Mix together:
- 1 cup of cream
- 2 cups of sugar
- 6 egg yolks
- 1/4 tsp. of salt
- 5 cups of rhubarb – cut fine
- 4 tbsp. of flour
Pour on top of baked crust. Bake 40-45 minutes at 350 degrees.
Topping:
- Beat 6 egg whites ’til firm. Add 12 tbsp. of sugar (2 at a time) and 1 tsp. of vanilla. Put on top and bake at 350 degrees ’til brown.
