Pumpkin Sugar Cookies

1/2 cup of softened butter

1/2 cup of pumpkin puree

1/2 cup of powdered sugar

2 eggs

1/2 cup of vegetable oil

1 cup of granulated sugar

1/2 tsp. of vanilla

*In a large bowl, mix together until smooth. Slowly mix in the dry ingredients.

4 cups of flour

1/4 tsp. of cream of tarter

1 tsp. of cinnamon

pinch of cloves

1/4 tsp. of baking soda

1/2 tsp. of salt

1/2 tsp. of nutmeg

*Mix until completely incorporated.

Scoop onto a baking sheet using 1 1/2 tablespoon scoop. Flatten to 1/2 inch thick using the bottom of a glass dipped in sugar.

Bake in 350 degree oven for 10-12 minutes.

While cookies bake, mix together glaze until smooth: 3 cups of powdered sugar, 4 tbls. of water and 1/4 tsp. of pumpkin pie spice.

Allow cookies to cool 3 minutes on baking sheet, transfer to cooling rack, spread glaze over warm cookie. Let glaze harden for 2-3 hours before serving or eat them warm with the runny glaze 🙂
