Pumpkin Bread

1 3/4 cups of flour

1 pkg. of vanilla instant pudding

1 tbsp. of baking powder

2 tsp. of pumpkin pie spice

1 tsp. of baking soda

Mix together and set aside.

Whisk together:

  • 1/2 cup of butter (melted)
  • 1 cup of sugar
  • 1 can (15 oz.) of pumpkin

Blend in 2 eggs

Add flour mixture and stir until dry ingredients are moistened.

Pour into a 8×4 inch loaf pan. Spray with cooking spray. Top with 1/3 cup of chopped walnuts.

Bake at 350 degrees for approx. 1-hour or until toothpick comes out clean. Cover loosely with foil the last 20 minutes. Cool 10 minutes and remove from pan. Cool completely.
