Homemade Apple Cider

Ingredients

(1) 5-quart pail of apples

4 quarts of boiling water

1 tsp. of cream of tarter

1/4 cup of lemon juice

3/4 cup-1 cup of sugar

*Remove stems and cut apples into quarters. Pour boiling water that has cream of tarter added to over the apples.

*Let this sit for 1-2 days and cover. After you strain the apple juice from apples, add lemon juice and sugar to taste. Boil for 5 minutes. Add cinnamon sticks and whole cloves while boiling or you can just use regular cinnamon and cloves and sprinkle into juice. Pour hot into jars to seal.

*I use a large crock jar and do serveral batches at a time or a large plastic pail can be used if no crock is available. I put a plate on top of apples to weigh them down. When I put the juice in jars if I used cinnamon sticks, I will put 1 in each jar to give it more flavor. I use the sticks over several times.
