Healthy Salad

2 cups of Granny Smith apples (peeled & chopped)

(1) 8 oz. of pineapple tidbits (drained)

8 oz. Cool Whip (lite)

1 tsp. of coconut extract

1/4 cup coconut

2 tbls. of chopped dry roasted peanuts


Combine apples and pineapple. Add the cool whip and extract. Mix gently, then add the coconut and peanuts. Cover and refrigerate for 30 minutes.
