Four Fruit Compote

Ingredients

1 (20 oz.) can of pineapple chunk or bits

3-4 unpeeled apples, chopped

1/2 cup of sugar

2-3 bananas, sliced

1/3 cup of orange juice

1 (11 oz.) can of mandarin oranges, drained

2 T. of cornstarch

1 T. lemon juice

Drain pineapple (reserving the 3/4 cup of juice) in a saucepan. Combine sugar and cornstarch. Add pineapple juice, orange juice and lemon juice. Cook and stir over medium heat until thickened and bubbly and stir 1-minute longer. Remove from heat and set aside. In a bowl, combine pineapple, mandarin oranges, apples and bananas. Pour warm sauce over the fruit and stir gently to coat. Cover and refrigerate!
