Corn Salsa

Ingredients

2 cups of fresh corn off the cob or (1) 12oz. bag of frozen corn, thawed and drained

2 medium-sized Jalapenos, seeded and chopped – if you want a hotter salsa, leave the seeds in

1/3 cup of finely chopped red onion

the juice of 2 whole limes

1/2 tsp. of salt

1/2 tsp. of pepper

*Combine and serve. Better if mixed a few hours before serving so the flavors get a chance to blend. Eat with chips or on tacos, burritos, etc.
