Ingredients
1 tbls. of olive oil
8 ounces of boneless skinless chicken breasts, cut into 1-inch cubes
4 medium zucchini, sliced
1 can (about 14 ounces) of diced tomatoes
1 can (about 14 ounces) reduced-sodium chicken broth
1 tsp. of dried Italian seasoning
1 cup of uncooked whole wheat couscous
Let’s Cook
- Heat oil in large skillet over medium-high heat. Add chicken; cook and stir 4 minutes or until lightly browned.
- Add zucchini, tomatoes, broth and Italian seasoning; simmer over low heat 15 minutes, stirring occasionally
- Remove from heat. Stir in couscous; cover and let stand 7 minutes. Fluff with fork.
Makes 4 servings.
