Ingredients
2 cups of sugar
1 cup of canola oil
3 large eggs
1 tsp. of vanilla extract
2 1/2 cups of flour
2 tsp. of baking powder
1 tsp. of baking soda
1 tsp. of salt
1 tsp. of ground cinnamon
4 medium, tart apples (peeled and chopped or 4 cups)
1 cup of chopped pecans
1 package (11 oz.) of butterscotch chips
*In a large bowl, beat the sugar, oil, eggs and vanilla. Next, add the flour, baking powder, baking soda, salt and cinnamon. Mix well. Stir in apples and pecans. Pour into a greased 9×13 pan. Sprinkle on chips. Bake for 55-60 minutes. Cover loosely with foil during the last 10-15 minutes to prevent over-browning.
