Ingredients
For the dressing:
1/2 cup of mayo
3-4 tbls. of BBQ sauce – (I use Jack Daniels)
2 tbls. of finely chopped onion
1 tbls. of lemon juice
1/4 tsp. of pepper
8 cups of torn salad greens – (I use 2 bags)
2 large tomatoes – chopped
1 1/2 lbs. of boneless, skinless chicken breasts – cooked and cubed – (I use 4)
10 bacon strips – cooked and crumbled – (I use 15)
2 hard cooked eggs – sliced – (I used 4 or 5)
Shredded cheddar cheese
In a small bow, combine the first 5 ingredients: mix well. Cover and refrigerate until serving. Place salad greens on a large serving platter. Sprinkle with tomatoes, chicken, bacon and shredded cheese – top with sliced eggs. Drizzle with dressing.
