Beet Cake

Ingredients:

3 eggs

1 1/2 cups of sugar

1 cup of oil

1 1/2 cups of beet pulp (canned beets are ok too)

2 oz. of melted chocolate squares

1 3/4 cup of flour

1 1/2 tsp. of soda

1/4 tsp. of salt

1 tsp. of vanilla

Frosting:

1/2 pkg. of 8 oz. cream cheese

2 cups of powdered sugar

1/2 cup of butter

1/4 tsp. of vanilla

*Whip together eggs and sugar until light. Add oil, beets, melted chocolate and mix well. Add sifted dry ingredients. Mix on low speed. Add vanilla and mix. Pour into greased and floured Angel Food pan or bundt pan. Bake at 350 degrees for 50-60 minutes. Its a good moist cake.

*If you don’t have chocolate squares, substitute with 3 tbls. of unsweetened cocoa powder – regular or dark. Plus, 1 tbls. of oil.

This recipe uses 6 tbls. of unsweetened cocoa powder plus 2 tbls of oil mixed together.
