(2) ripe bananas
(1) small zucchini …grated and well drained of water
(2) eggs
1 ¼ cups of sugar
¼ cup of sunflower oil or canola oil
(3) tablespoons of olive oil and (1) teaspoon of olive oil
(1) teaspoon of vanilla
(1) teaspoon of baking soda
(1) teaspoon of baking powder
1 ¼ cups of flower
¼ teaspoon of salt
¼ cup of milk
(1) tablespoon of apple cider vinegar or regular vinegar
(1) cup of walnuts or chocolate chips
Heat oven to 350 degree. Mash bananas and mix with zucchini. Beat eggs, and then mix with sugar, oils and vanilla and to the mixture. Combine flour, soda, baking powder and salt and add to the mixture. Mix together milk and vinegar and fold in nuts or chocolate chips and add to the mixture. Pour into greased and floured pans. (Rose Ann uses four small pans…!!!) bake until golden brown and a tooth pick comes out clean!
