Rhubarb/Apple Cookies

1 cup of butter

1 1/2 cup of brown sugar

2 eggs

1 tsp. of baking soda

1/2 tsp of salt

1 1/2 cup of chopped rhubarb or apples

3/4 cup of flaked coconut

3 cups of flour

 

Cream butter, brown sugar and eggs. Add baking soda, salt and flour. Fold in either rhubarb or apples and coconut. Drop by tsp. and bake at 350 for 10-15 minutes. Frost with a cream cheese frosting.
