Ingredients
2 cups of cucumbers – peeled/seeded/shredded
3 eggs
1 cup of vegetable oil
2 cups of sugar
1 tsp. of vanilla
1 cup of nuts (chopped)
3 cups of flour
1 tbsp. of cinnamon
1 tsp. of baking soda
1/2 tsp. of salt
1/4 tsp. baking powder
1/8 tsp. of nutmeg
1/8 tsp. of cloves
1/2 cup crushed pineapple
Let’s Cook!
Place shredded cucumbers in colander, drain for 30 minutes. In a bowl mix eggs, oil, sugar, vanilla, nuts, drained cucumber and pineapple. In a separate bowl whisk dry ingredients together. Stir dry ingredients into wet ingredients. Put in a jelly roll 15×10 pan. Bake about 20-25 minutes at 350 degrees.
