Potato Salad

Ingredients:

5 lbs. of potatoes (cooked in jackets – peel and dice)

1/3 cup of celery, diced

1/3 cup of onion, diced

5 eggs, well beaten

1/3 cup of sugar

1/8 cup of vinegar

*Cook and stir constantly potatoes, sugar and vinegar – – until thick, then cool

Stir in – – 2 cups of salad dressing, 6 oz. of cream and yellow mustard for taste

Take 8 cooked eggs (dice into fours) and stir in. Slice remaining 4 eggs and place on top of salad. Sprinkle w/ paprika.
