Zucchini Crisp

Crust:

4 cups of flour

2 cups of sugar

1/2 tsp. of salt

1 1/2 cups of butter pieces

*Combine ingredients and press half in a greased 9×13 pan – bake for 10-12 minutes.

Filling:

8 cups of sliced zucchini

2/3 cup of lemon juice

1 cup of sugar

1 tsp. of cinnamon

1/4 tsp. of nutmeg

*you can add 1/2 cup of raisins or nuts

*Cook zucchini and lemon juice together ’til soft. Drain juice and add sugar and spices. Simmer for several minutes. Stir in raisins and nuts if you want. Put this on top of the crust and sprinkle remaining crust mixture. Bake at 375 fro 25-30 minutes.
