Wild Duck Casserole

Ingredients:

2 ducks

flour seasoned with salt and pepper

2 tsp. of powdered ginger

2 oz. of butter

1/2 clove of garlic, minced

1/2 lb. of fresh mushrooms, sliced

1 green onion top and bulb chopped

1 tbsp. of parsley, chopped

1/4 tsp. each of thyme, marjorom and basil

4 oz. of dry white wine

1 tbsp. of brandy

1/2 cup of cream

Let’s Cook!

Cut duck into serving pieces. Dredge with seasoned flour, sprinkle with powdered ginger. Melt butter in heavy skillet, add garlic and heat. Add mushrooms and duck pieces and brown. Place contents of skillet in casserole. Add chopped onion and remaining ingredients except cream. Cover casserole. Bake at 350 degrees for 1  hour. Add cream and bake 25-30 minutes longer or until ducks are tender. Yields 6 servings.
