Rhubarb Muffins

1 1/4 cup of brown sugar

1/2 cup of oil

1 egg

2 tsp. of vanilla

1 cup of buttermilk

2 1/2 cups of flour

1/2 tsp. of salt

1 tsp. soda

1 tsp. of baking powder

1 1/2 cup of rhubarb (cut-up into small pieces)

Walnuts (optional)

*Bake at 350 degrees for 20-25 minutes.

**Topping – 1 tbsp. of butter, 1 tsp. of cinnamon and 1/2 cup of sugar. Mix together and top muffins before baking.
