Easy Chicken & Rice Casserole

Ingredients

1 cup of rice

3/4 cup of sliced celery

1/4 cup of sliced onions

1/4 cup of chopped green peppers

1/4 cup of chopped red peppers

8 oz. of fresh mushrooms, sliced

2 tbls. of oil

2 cups of cooked and cubed chicken

1/2 cup of mayo

1 can of cream of chicken soup

 

Let’s Cook!

Preheat oven to 350 degrees. Cook rice as usual. Set aside. Saute celery, onions, peppers and mushrooms in oil. Add remaining ingredients. Fold in rice and poor into an oiled 2 qt. baking dish. Bake for 20 minutes. Serves 6.
