Dipped Gingersnaps

Ingredients

2 cups of sugar

1 1/2 cups of sugar

2 eggs

1/2 molasses

4 cups of flour

4 tsp. of baking soda

3 tsp. of ground ginger

2 tsp. of cinnamon

1 tsp. of salt

(2) 10-12 oz. pkgs. of white baking chips

1/4 cup of shortening

 

Mix sugar, oil, eggs and molasses. Add flour, soda, ginger, cinnamon and salt. Mix well. Shape into 3/4 inch balls and roll in sugar. Place on baking sheet and bake at 350 degrees for 10-12 minutes. Cool. Melt chips and shortening until smooth. Dip cooled cookies into melted chips 1/2 way and lay on wax paper. Very Very good cookies!!!
