Chicken Rice Casserole

*Preheat oven to 400 – grease 9×13 pan.

*Over medium heat – mix the following:

  • 2 cans of condensed cream of mushroom or chicken soup
  • slowly add while whisking, 1 1/2 cups of milk
  • bring to a boil until thickened

*Mix in:

  • 4 cups of cooked chicken or turkey
  • 3 cups of cooked rice

*Pour in prepared 9×13 pan.

Mix together 1/2 cup of dry bread crumbs, 2 tbls. of parmesan cheese and 1 tbls. of melted butter. Sprinkle this on top. Bake until bubbly and golden brown about 25 minutes.
