Apple Pumpkin Muffins

2 1/2 cups of flour

2 cups of sugar ( 1 white / 1 brown )

1 tbsp. of pumpkin spice

1 tsp. of soda

1/2 tsp. of salt

2 large eggs, beaten

1 cup of pumpkin

1/2 cup of oil

2 cups of finely chopped peeled apples

*In a large bowl, combine dry ingredients. In another bowl, combine eggs, pumpkin and oil. Stir into dry ingredients until moistened. Fold in apples. Full muffin cups.

Topping:

  • 1/4 cup of sugar (1/2 of that brown sugar)
  • 2 tbsp. of flour
  • 1/2 tsp. of cinnamon
  • 1 tbsp. of butter

*Combine ingredients to resemble coarse crumbs, sprinkle over muffins. Bake at 350 degrees until toothpick comes clean – about 30-35 minutes. Cool in a pan for 10 minutes before removing from pan.

*I used frozen sliced apples, thawed and drained 1-day before using – they were very moist!
